One of the Best ever
I have going to France regularly since 1973 and have seen the "greats" come and go. I was friends with the late Madame Point of la Pyramide, Alain Chapel, Jacques Pic and JC Vrinat of Taillevent. It is with that backround that I say that Alain Passard and his Arpege is truly one of the great restaurants I have ever experienced in France. At the present, I equal it only with another friend, Pierre Gagnaire. The Passard kitchen massages the flavor out of every vegetable, every piece of fish and poultry. The kitchen is not hot, the cooking is slow. He does more with vegetables than anyone I have ever experienced. His fish, shellfish and poultry are poetry. If he will still do the classic ask for la tomate aux douze saveurs - a tomato with multiple spices for dessert! A truly sublime experience - bring many euros!!! But wortyh it times 10.
